Easy Zucchini Brownies

This is not a “healthy” recipe, but it does make the usual brownie mix recipe healthy.  They taste great and you can’t tell that there is zucchini in it.  I seriously tested it out on 2 people and then told them the “secret” ingredient. They couldn’t believe it.

  • 1 box Brownie Mix, Family Size
  • 2 tbs Hershey’s Chocolate Syrup
  • 2 Eggs
  • 1 cup Zucchini, peeled and shredded
  • 1/4 cup Water

Brownie Batter

Preheat the Oven (See Brownie Mix box for the exact temp)

Mix all the ingredients in a large bowl. The batter will be slightly lumpy.

Pour batter into a greased pan. (Pictured is a my favorite brownie pan. 11×7 that I purchased at Dollar Tree years ago and is perfect).

Bake for 30-35 minutes. See brownie mix box for exact timing. Oven times always vary.  Do not overbake! These brownies will be extra moist with the zucchini, and overbaking will take that all away.

baked browniesLet the brownies cool and then serve.  I cut them into 2×2 squares and place the extras in ziploc baggies for freezing. Basically, this recipe is just exchanging the oil for the zucchini (which saves A LOT of calories and fat!).
