Rainbow Cake

For my co-worker’s birthday I made a special Rainbow Cake for her and I honestly did not know it was going to turn out SO COOL LOOKING! Instead of the traditional colors (blue, red, orange, yellow, green, purple) I used purple, pink and green. You have to admit, it is pretty! There are a lot of tutorials online showing how it’s done. My way is simple and easy.

Ingredients:

  • White Cake Mix (fully made according to box directions)
  • Food Coloring (Gels work the best)

Preheat the oven to the temperature directed on the box.

The original directions for Rainbow Cake are to evenly distribute the cake batter into bowls and mix the individual colors. The Ms.Jme way is to estimate each bowl’s amount then add the food coloring. I highly recommend gel. It is extremely easy to use and you don’t have to add much to get the bright colors. Seriously, get the gel. That is the only way to go.

Start with a greased pan. Pour your first color in it and try to make it cover the whole bottom. Then slowly add the rest of the colors in.  The trick is to pour the batter from a height of at least 2 feet above the pan.  Basically I stretch my arm up then pour. It makes the colors “impact” each other.  Okay, maybe “impact” isn’t the right word. Just do it like I say and it will turn out awesome, I swear. 😉  For this cake I started with purple then did the green and pink and ended with the white. Putting the white in the middle, as seen in the photo above, actually gave it the “rainbow” shape.

You can do the same thing for cupcakes. Use an ice-cream scoop to evenly distribute the batter in the cups (pour each one in at least 2 feet above the pan as directed above) or you can just “eyeball” it like I do and pour it in with a small cup.

rainbow cakeBake the cake as directed.  Do the toothpick test to make sure it is done. If you use a cake mix with pudding in it, the cake will be extra moist will take longer to cook (5 minutes or more).

For this cake I flipped it onto a plate when it was cooled.  I have to admit, I wasn’t sure what it was going to look like inside and it drove me crazy!

I topped it off with my homemade butter cream frosting and some cute pearl sprinkles.  If you haven’t tried my butter cream frosting, then you are missing out!
