Easy Breaded Chicken

I have to warn you, if you like precisely measured recipes you will get very frustrated at me.  I’m a estimator when it comes to some, okay most, of my dinner recipes.  There is a guideline, then I mix it up by adding extra or less as I feel like it.  This is one of those recipes.  Sorry!

Ingredients: Pam Spray/Spray Oil, 1/3 cup Parmesan Cheese (estimated!), 1 cup Bread Crumbs (estimated!), 1/4 cup Flour (estimated!), 1 Egg, 1 tbs Milk, 1/2 to 1 tsp your favorite seasoning, 2 Boneless, Skinless Chicken Breasts that have been marinated. (I marinate ours in Lawry’s and water for at least 1 hour prior to cooking…this is an optional step, but it’s worth it!)

Preheat oven to 375 degrees

Sprinkle flour onto a plate.

Whisk egg and milk in a medium sized bowl.

Mix Bread Crumbs, Parmesan and Seasoning in a medium sized bowl.

Cut Chicken into small pieces (about 4-5 slices per breast).  Roll each piece in flour, then in the egg mix then cover with bread crumb mix.  Place on a greased (with the Spray Oil!) baking sheet. Sometimes it takes more bread crumbs, sometimes I have too much left over.  That’s why I have this estimated!   You do not have to cut the breast in pieces. If you bake it whole, the baking time needs to be doubled or tripled, at least! I haven’t done that yet so I’m not for sure 😉

Spray the top of the chicken with the Spray Oil.  This helps it be a bit crispy.

Bake for 14-18 minutes. Oven times vary. Check the internal temperature.  It is ready at 165 degrees.  Do not flip the chicken while baking!  This may cause the breading to fall off.
