Fresh Peach Cobbler

This recipe will be your go to recipe every summer when peaches are in season and you want a tasty dessert.  It is also very easy to make.  You can’t go wrong!

Ingredients for the Filling:

  • 4-5 medium sized Fresh Peaches. Peeled and sliced.  (I think it is called into an 1/8th)
  • 1/3 cup packed Brown Sugar
  • 1 tbs Lemon Juice (fresh or concentrate)
  • 1 tbs Flour
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Cinnamon Sugar
  • Dash of Salt

Ingredients for the Topping:

  • 1 box White/Vanilla Cake Mix
  • 1 stick of Butter
  • 1/4 tsp Vanilla Extract
  • 1/4 tsp-1/2 tsp Cinnamon Sugar (not in the above picture because I forgot!)

Preheat Oven at 375 degrees. Grease a 9×9 or 8×8 cake pan.

Filling:

In a large bowl, add the sliced peaches and Brown Sugar. Stir about five-ten times (make sure there are no sugar lumps).  Sprinkle the lemon juice onto the mixture and stir another ten times.  Mix in the vanilla extract and stir (yes, another ten times 😉 ).  Add the Cinnamon Sugar and a dash of salt. Stir some more. Sprinkle the flour onto the mixture and stir about five-ten times.

Pour the filling into the greased cake pan and bake for 5 minutes.  While it is baking, prepare the topping.

Put the Butter into a bowl and microwave it for 20 seconds. It should be mostly melted (like the photo). Do not over heat it.

Add the Cake Mix and stir it together with a fork. The mixture should be crumbly. Add the vanilla and stir until it is thoroughly mixed. There will be lumps and that is okay!

cobblerAdd a layer of the topping onto the hot filling.  Press down with a spoon or fork (not too hard).

cobblerSpread the rest of the topping on top and then sprinkle the Cinnamon Sugar all over. Bake for 26-28 minutes.  Oven times vary, so make sure to check it after 25 minutes just in case.  The cobbler is done when the topping is golden brown.

cobblerLet the cobbler cool for at least 10 minutes before serving.  I prefer keeping it in the fridge after serving it, as it helps keep it from getting mushy.   Try it and let me know what you think!  I made up this recipe after researching dozens of peach cobbler and peach crisp recipes.  We were given some fresh peaches and I knew I had to find something to do with them.  Inspiration for parts of the recipe came from Chow.com and Food.com.
