Baked Garlic Chicken Breasts

This is a super easy and quick recipe that I make for dinner a few times a month. The basic ingredients for a dinner for 2 are: 2 Chicken Breasts cut into small pieces, 1 tbsp Minced Garlic, 2 tbsp EVVO(Extra Virgin Olive Oil), and spices-Garlic Pepper, Garlic Salt and Lawry’s Seasoning.

The most frugal way is to buy the huge bags of frozen Chicken Breasts at the store (usually around $6-$7).  HERE is a link for the best step by step way to thaw them. In my words: use the defrost setting on the microwave and let it run for about 2 minutes, flip them around, defrost for another minute or two and that’s all. It is best to not let them “cook” before you cook them. This makes the chicken tougher and drier.

I use a toaster oven to bake this recipe. It is much more convenient and produces a lot less heat in the kitchen.  Either way, pre-heat the oven for 375 degrees and line a cookie sheet with aluminum foil.

In a large mixing bowl, add the Chicken Breast, EVVO , and the Minced Garlic. The easiest way to season is to set the pieces on the cookie sheet, sprinkle the seasonings on, flip the chicken over and sprinkle on the other side.

Bake in the oven for 8 minutes. Turn the pieces over and bake for another 8 minutes. Check the temp. The chicken is done when they are at least 165 degrees. Before I owned a thermometer, I did the old “check for pink in the middle” trick.  If it was white all the way through, then that meant it was done. I am not saying this is the best way to do it, just saying how I used to do it before I did it the “right way.”

Rice and steamed green beans make awesome side dishes.  This meal takes about 20 minutes to make.  Experiment with spices, sometimes I add Lemon-Pepper for a bit of zest.  I love recipes that are easy to make and are easy to change up.
