Quick Microwave Muffin Recipe

Last weekend it was too hot to bake, but I was craving sweets. The only thing in the cupboard was a Pillsbury Blueberry Muffin Mix. I was desperate and decided to experiment. I have tried the cake in a cup and brownie in a cup recipes, so I was sure it would work.

Basically, if you have a chance to try it, do it. If you suck at baking, try it. If it is way too hot out, try it.

Prepare the mix as directed on the packet and put 2 big spoons of it in a coffee cup. Microwave for 1 minute on the regular settings. Poke a toothpick in it and it should come out clean, if it doesn’t then cook for 15 second intervals until it does. This made 3 “muffins.”

This is what they look like out of the cup. I was really anxious, so I didn’t keep it in the cup and take a pic. Oops! I also added a few real frozen blueberries to one of the muffins (the one on the right) and it was fantastic!
