I like to experiment with new recipes and see what I can make out of items I already have in my cupboard. I did a quick google search to see if there were any tips on combining a cake mix and canned cherry pie filling and found THIS forum. With help from the posts on there I made a yummy chocolate cherry cupcake. They are very moist too!
Ingredients:
1 Chocolate Cake Mix, 1 can Cherry Pie Filling, and 3 eggs
Preheat the oven for 350 degrees
Mix all the ingredients in a large mixing bowl. Do not use a hand mixer! Only use a spoon to mix it. The cherries are kind of “delicate.” The batter will be thick.
Fill the cupcake liners 3/4 full. These cupcakes will turn out “ugly.” Similar to my “ugly muffins.” This is because the batter is thick and doesn’t contain any oil or water. If you want a smooth top, use a small spoon or spatula to even out the tops before you bake.
In a previous post I mentioned my awesome Babycakes maker. It bakes a dozen regular cupcakes in less than 9 minutes. I love it! And I haven’t been able to find another in stores, which is odd. If you ever see one and you love cupcakes like me, then I suggest you get it. It is an awesome appliance.

Bake the cupcakes for 18-20 minutes. Do a toothpick test. If it comes out dry, then they are ready.
