Cream Cheese Frosting

Homemade cream cheese frosting is fairly simple to make.  It is also easy to “change it up” and make it taste more sweet or more like a cheesecake. I usually frost chocolate cakes/cupcakes with it, but really it goes with any flavor.

Ingredients:

2 cups Powdered Sugar, 1/2 stick Butter, Cream Cheese (whole package), and 2 tsp Vanilla Extract. All ingredients need to be at room temperature. Sift the sugar before using it. This will prevents bumps and clumps.

For the basic frosting, combine the cream cheese and butter. Mix until creamy (as shown above).  Add the vanilla extract.  With the mixer on low, slowly add 1/2 cup of powdered sugar at a time. It will be very creamy. It is best to let it sit in the fridge for 20-30 minutes before using it. This will stiffen it up a bit, but you may also put it on your baked goods right away.

If you want your frosting to taste more like cheesecake, use only 1 3/4 cups of powdered sugar and 6 tbs of butter.  To make it more sweet, use 2 1/2 cups of powdered sugar and 4 tbs of butter. Sometimes I use the extra frosting on cinnamon rolls.  The frosting will keep in the fridge for at least a week.  To be honest, I don’t know for sure how long it will last because it is usually eaten before too long.
