As usual, my photos don’t do the food any justice. This has to be one of the oddest recipes I have come up with, texture-wise. It’s like a thick tapioca pudding. If I did my math right, it is chocked full of calcium, fiber, other vitamins and protein. I came up with this idea by first seeing THIS RECIPE and then deciding that I could make it better and easier by just using the almond milk I had on-hand, and I was right.
1 cup Dark Chocolate Almond Milk
1/3 cup Chia Seeds
Mix the two ingredients together and leave it in the fridge for a minimum of 4 hours. The longer it sets, the thicker it gets. Don’t overeat though! It is full of fiber and other nutrients, and if you aren’t used to eating that much in a serving than eat a small bit at a time (a couple spoonfuls). This makes a great snack, breakfast side dish or treat during the day.
