Pumpkin Cupcakes

Yummy. Easy to make. No mess. Full of flavor. One of my favorite pumpkin recipes this Fall.

Ingredients:

  • 1 Box White Cake Mix
  • 1 can Pure Pumpkin
  • 1 tsp Vanilla Extract
  • 2 tsp Cinnamon

Preheat Oven for 350 degrees

Mix the ingredients together.  Fill cupcake liners 3/4 full of batter. Smooth the tops out with the back of the spoon.  They do not expand much when baked, so if the tops are ugly when they go in the oven, they will be ugly after baking.

Bake for 23-25 minutes. Cupcakes should be lightly browned. Do the touch test.  Lightly touch the top and if it bounces back then it is ready.  The toothpick test doesn’t work as well because these are extremely moist and will always leave some on the toothpick.

These are a fantastic snack and are packed full of nutrients thanks to the pumpkin.  You can make these without the vanilla and cinnamon, but they won’t be as tasty 😉 Sprinkle some cinnamon sugar on them or top them off with cream cheese frosting.
