Italian Marinade Chicken

This is by far one of the easiest dinners to make. The hard part is always figuring out what to have for sides. My “Italian Marinade Chicken” has only two ingredients and takes about 30 minutes to prep and bake.

The two ingredients you need are chicken and Italian Dressing (Wishbone is the best, in my opinion). I always thaw out a boneless chicken breast for each person that will be at dinner.  Frozen chicken breasts tend to be the cheapest and they are good quality.  Each breast is cut into small pieces (one average sized breast is four pieces).  You can use whole breasts, but this increases the baking time significantly.  When I am cooking, I’m usually impatient.

Put 2 tablespoons of Italian Dressing per serving (chicken breast) into a bowl. Add the chicken, cover, and let marinate for 5 minutes.

Preheat oven for 375 degrees. I usually use the toaster oven for this and it is great to have in the summer and not worry about heating up the kitchen.

Place the chicken pieces onto a foil covered sheet.  Bake for 8 minutes and then turn the chicken over.  Bake an additional 8 minutes.  Oven times vary, so it may take a few more.  Use a meat thermometer to check the temperature. The chicken is done when it is at least 165 degrees.

Some good sides to have with it are rice, green beans, asparagus, or salad.  It took me longer to write this blog post than it did to make the chicken.  This is a fantastic recipe and doesn’t require a lot of ingredients or prep work.
