Crockpot Pork Roast

pork roastI’m starting this blog post with one of the worst photos I have ever taken AND posted.  Oops. Sorry!  Whatever you do, do not judge me by my photography skills, but by my easy to follow instructions 😉  I usually don’t pair veggies with pork roast (usually pork butt or pork shoulder-whichever is on sale).  I typically make it in the crockpot to turn into delicious pulled pork BBQ.  I have made it this way a few times now and it’s changed up my routine some as I love it!

To make a deliciously awesome Pork Roast in the crockpot you need a few ingredients: 1 3-5 lb pork roast, 1 cut chopped onion, 2 diced potatoes, 1 cup baby carrots, Dash of Lawry's Seasoning Salt and 1-2 tbs Stone Ground Mustard (Boetje's is a local favorite of mine).

This photo doesn't make it very appealing, but this is how it "should" look in the crock pot. I put the veggies in, add a cup of water, place the meat on top, sprinkle the seasoning salt and then rub 1-2 tbs of Boetje's onto the meat. Then it's covered and cooked on the "LOW" setting for 6-8 hours.

The meat will fall apart when it's finally served up. I love how tender it gets. The stone ground mustard gives it a great taste too. This recipe is easy, somewhat healthy and very filling!
