Jme’s Famous Popcorn

Popcorn is a fantastic after-school snack for kids. Anyone can microwave a packet, but I make it the “real” way…with some Oil (Peanut or Vegetable), kernels, butter, popcorn salt and Parmesan cheese.  It takes about 10 minutes to make and kids love it.
Wait, did I just say Parmesan Cheese?  Okay, that is not the “real” way, but a secret of mine that now I am sharing with the world.
Ingredients: 1-2 tbs Parmesan Cheese, 3 tbs Oil(Peanut or Vegetable work great), Popcorn Salt, 1/3 cup popcorn kernels, 1 tbs stick butter (To be honest, I don’t normally measure out the ingredients. I have been making it for so long that I have become “lazy” and just coat the bottom of the 4 qt pot with the oil and a single layer of popcorn. )
*Pour the oil and the kernels into a 3 or 4qt pot similar to these.  Cover the pot, but leave a small opening for a vent.  Cook at a medium-high temp.  
*As this is heating up, prepare a large bowl with the Parmesan Cheese and a dash of Popcorn Salt and melt the butter in a separate small bowl.  
*Resist the urge to open the cover of the pot and take a peek. This is a good way to get burned! Just leave it be until the popcorn slows down popping and it takes more then a second or two between pops. (Same way you would keep an eye on microwave popcorn).  
*Slowly pour the popcorn into the large bowl and stir the Parmesan/Salt mix and popcorn together. Please note, there will probably be some un-popped kernels which is better then having burnt popcorn. 
*Add the butter and keep stirring until it is mixed well. Add more salt to taste. 
 
My pictures on here don’t tell the story very well. I guess I need to invest in a better camera phone. Either way, I promise this recipe is healthier and yummier then movie popcorn. Okay, definitely a lot healthier, but the taste is quite awesome too even with just the little bit of butter in it.
