Soda Lemon Cupcakes

Yum!

I love to bake, especially in the winter.  The heat from the oven and delicious aromas cure my cabin fever.  Last year I put my baking skills to good use and held Bake Sales for American Cancer Society’s Relay for Life.  I have to admit I am not good at sharing my recipes-only because I am the kinda person that adds “a spoonful or so of this, dash of that, a dab of this.”

Today I decided to try the Soda Cupcake which can be found all over Pinterest and other food blogs. It is an easy to follow recipe and I highly recommend it for everyone to try.

Ingredients: 12 ounces of Sprite Zero(room temperature is best), 1 lemon cake mix, and a “dash” of Instant Jello Lemon Pudding(totally optional).  This recipe makes roughly 20 cupcakes.

Preheat oven to 350, mix the Sprite and cake mix together on low speed for about 2 minutes with a blender.  If you mix by hand, make sure that all lumps are gone and the batter is creamy.  I added about 2 spoonfuls of Instant Jello Pudding (mostly because I find it hard to follow recipes exactly and have to add my spin to it).  
 
Fill the liners about 1/2 to 3/4 full and bake for 14-17 minutes. 
I used both the toothpick test and the touch test (lightly touch center with tip of finger and cake should bounce back) to make sure they were done. These turned out perfectly moist.

For frosting I was “lazy” and used a store-bought vanilla with 2 spoons of the pudding mix added to it.  This turned out quite yummy and had a hint of lemon.  There are dozens of other variations to the Soda Cupcake, and I can’t wait to try them. This recipe takes about 5 minutes for prep and  less then 20 minutes to bake.
