My pasta salad is quick and easy to make. Most of the ingredients you can purchase already cubed and diced. I go the more “frugal” way and pay less for them and prep them myself. It is a simple recipe, but very delicious (if you like Italian dressing).
Ingredients:
- 1 box Tri-Color Rotini Noodles (Prepare as per directions on the box. When they are cooked, rinse them with COLD water. This prevents the noodles from sticking together.)
- 3/4 cup Italian Dressing (I always use the Wishbone brand)
- 1 cup diced/chopped Green Olives
- 2 sticks of Mozzarella Cheese sliced into small bits (string cheese works best for me, and I like the circle shape)
- 1/2 block of cubed Colby/Jack or similar cheese (4 ounces or about 1 cup of the pre-cubed)
- dash of Lawry’s Garlic Pepper
Mix the cheeses, dressing, olives and seasoning in a nice sized bowl. Mix in the cooked pasta and you are done! It takes about 15 minutes total to prep and make this yummy dish. When I eat the leftover pasta salad (if there ever is any) I always splash about a spoon or two of Italian Dressing. Leftovers keep for about 3 days in the fridge. I have never had any leftover that didn’t get eaten by me or house guests.
An idea to make it healthy: add fresh veggies! Sliced carrots, cucumbers, peppers and onions make a great addition to this salad.
