Flour-less baking may be my next obsession. I saw this recipe on Pinterest and on a whim decided to try it. There were doubts in my head that it would turn out good. Who ever thought you could bake a cookie with no flour? But, it actually turned out fantastic, even better than my old peanut butter cookie recipe (that I have yet to post). I did make some modifications to the original recipe, so be sure to follow my instructions to ensure a great batch.
Ingredients:
- 1 cup Peanut Butter (Creamy is preferred)
- 3/4 cup White Sugar
- 1/4 cup Powdered sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 1/2 tsp Baking Soda
- dash of Salt
- 1/2 cup Chocolate Chips (optional)
Preheat the oven for 350 degrees. Mix the ingredients together in the order they are listed above. Do not use a mixer! Just use a spoon and your own strength. Make 1 inch balls of dough and slightly flatten them (see photo above). Place the doughballs on a cookie sheet with about an inch space between and bake for 8-9 minutes. Let the cookies rest on the cookie sheet for one minute before transferring them to a cooling rack.
The cookies are fairly fragile while they are warm. This recipe makes 24 cookies. I am still amazed at how delicious these turned out. It also takes about 30 minutes to make, which isn’t very much time at all.
