Gimme S’more Golden Graham Cereal Bar

This is an old Ms.Jme recipe, circa 1990s, and it has probably been about 10 years since I made it.  You can buy a similar Golden Graham cereal bar at grocery stores or even gas stations, but this recipe makes twice as many for half the price.

Ingredients:
1/2 stick (1/4 cup) Butter
1 bag of large Marshmallows
1/3 cup mini Chocolate Chips
1 (12 oz) box of Golden Graham Cereal. Separate 1 cup out and place on the side for a later use.
Spray a 8×8 pan with cooking spray. This will prevent the bars from sticking.
In a large pan, melt the butter on low-medium heat and add the marshmallows. Frequently stir the marshmallows until they are completely melted. I put 1/2 teaspoon of vanilla extract in the marshmallows before the next step. This is optional, but I think it makes a tasty difference.
Remove the pot from the heat and add the cereal. Stir until all the cereal is coated and spread it evenly in the greased pan.
Sprinkle the chocolate chips on top and the 1 cup of cereal that was set aside. Gently press the top of the cereal bar with a spoon or your hand. This will keep the toppings from falling off. If you want “clean edges” when you cut, let the cereal bar chill in the fridge for at least 30 minutes before cutting.
